If you’ve perused the cereal aisle lately, you may have noticed the plethora of Chex cereal options. There’s corn, wheat, rice, peanut butter, blueberry, and on and on. Different types of Chex cereal creates different delicious snack mixes (classic Chex mix, “puppy chow”, etc.). To make Caramel Chocolate Chex you need the best option: chocolate Chex cereal. Obviously, chocolate makes it the best.
I bring this to parties, whip it up when we have visitors, and take it to friends. These unassuming little nuggets of goodness will have everyone saying “Oh wow, that’s good” before reaching for more.
Caramel Chocolate Chex mix is very simple to make. There is a special piece of equipment you need though: a microwave. You will also need two microwave-safe mixing bowls, one small for the caramel and one large for the cereal. Lastly, you need parchment paper (I line a jelly roll pan with it to keep everything contained while it cools), and a non-stick mixing spoon/spatula.

The method is as easy as 1-2-3: pour the cereal in the large bowl, mix up the caramel sauce, then smother the cereal in caramel-y goodness. Well, mostly that easy…
Storage: this keeps really well in a sealed container. Caramel Chocolate Chex fits in a gallon bag (just barely). I typically keep it in a bowl with a lid and little hands snitch morsels when that craving hits.

Caramel Chocolate Chex
Equipment
- microwave
- jelly roll pan
- Parchment paper
- large microwavable bowl
- medium microwavable bowl
Ingredients
- 8 Cups Chocolate Chex cereal One 12.8 oz box
- ¾ Cup packed brown sugar
- 6 Tbsp butter cut into chunks for easier melting
- 3 Tbsp light corn syrup
- ¼ tsp baking soda
Instructions
- Line jelly roll pan with parchment paper. Set aside.
- Pour Chocolate Chex cereal into large microwavable bowl. Set aside.
- In a medium microwavable bowl, combine brown sugar, butter chunks, and corn syrup. Microwave for 1 minute then stir. Microwave for 30-60 more seconds, until butter is totally melted. Add the baking soda and stir until it is all combined and foamy.
- Pour over cereal and gently stir. Microwave for 3 minutes, stirring gently after each minute so the cereal is completely coated.
- Spread evenly on prepared parchment paper and allow to cool for at least 15 minutes.
