Gluten Free Chocolate Cake

Once upon a time we were invited to dinner at a friend’s house. This may not seem like a big deal, but with three kids (at the time), one of which has life-threatening food allergies, getting invited to dinner doesn’t really happen very often. Which is actually fine because I enjoy hosting! My friend knows about my son’s allergies and reassured me that she has a niece with food allergies as well so she knows to be very careful. Anyway, we had a delicious meal there but had to get home before we got to enjoy dessert. My friend and her daughter made this special gluten- dairy- egg- nut-free chocolate cake just for us so she gave us a giant plate to take home. We basically ate the entire plate that night at home and my son begged me to ask my friend for the recipe. Which she texted me that night.

After some google searching, it turns out this cake is also known as “wacky cake” or Depression-era cake. It naturally has no eggs or dairy in it because those ingredients were scarce during the Great Depression. We switched wheat flour for gluten free flour and voilà, a cake even my son can enjoy. We make this for birthdays and I’d like to say that we cut it into squares to freeze, but it never lasts that long around here. Top with this dairy-free chocolate frosting.

The Best GF Chocolate Cake

Our family's favorite chocolate cake recipe that everyone loves!

Ingredients
  

  • 1 ½ Cups Gluten free flour I use Bob's Red Mill brand
  • 1 Cup white sugar
  • 4 Tbsp cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 6 Tbsp vegetable or canola oil
  • 1 Tbsp cider vinegar
  • 1 tsp vanilla extract
  • 1 Cup water

Instructions
 

  • Preheat oven to 350℉. Lightly spray a 9×9 or 8×8-inch pan with cooking spray. (I only have a 9×9-inch pan so that's what I use)
  • Combine GF flour, sugar, cocoa powder, baking soda, and salt in a bowl and whisk together to remove any lumps. Add oil, cider vinegar, vanilla, and water. Mix to combine.
  • Pour into prepared pan. Bake in preheated oven for 30-40 minutes, until a toothpick inserted into the center comes out clean.
  • Cool before frosting (my dairy-free chocolate frosting pairs perfectly with it!)
